We all know those game birds can be a little skimpy. This recipe will allow you to feed the family with your hens or roosters ... even if you only got one ;) A yummy twist on traditional chili that is light, flavorful and perfect for fall.
Prep time: 15 minutes
Cook time: 30 minutes (stove top) 4-6 hours (slow cooker)

Ingredients
1 lb game bird, cut into bite sized pieces
1 yellow onion, diced
1 green bell pepper, diced
2 tsp olive oil
2 cloves garlic, minced
2 cans white beans (drained)
2 cans garbanzo beans (drained)
4 4 oz cans diced green chilies (2 hot, 2 mild)
2 tsp salt
1 tsp black pepper
2 tsp cumin
1 1/2 tsp oregano
1 tsp chili powder
1/2 tsp cayenne pepper
8 oz reduced fat cream cheese - softened
1/4 cup half and half
Optional toppings: Shredded cheddar, diced jalapenos, fresh cilantro and saltine crackers
Instructions
-In a large slow cooker add beans, chilies, cream cheese, half and half and all dry seasonings, stir well, place slow cooker on low
-Add oil, onion and bell pepper to large saute pan, saute on medium high heat for 5 minutes
-Add game hen to pan, saute just until done, approximately 5 minutes
-Stir meat, pepper and onion mixture into slow cooker
-Cover and cook on low for 6-8 hours or high for 3-4 hours
-Stir well before serving with desired toppings (I like shredded cheddar, diced jalapenos, fresh cilantro and saltine crackers)
