Venison Parmigiana

Mmmmm.... You are probably used to having this dish with chicken. Well, that's good too, BUT I think you will find switching out the bird for a nice venison or other wild game steak brings this dish to a new level.

Prep time: 10 minutes

Cook time: 35 minutes

Servings: 6

Ingredients

6 venison steaks, trimmed, pounded flat

3 eggs, beaten

2 cups Italian style panko breadcrumbs

1/2 cup shredded parmesan cheese

2 cups marinara sauce

2 cups shredded or fresh mozzarella

Instructions

-Preheat oven to 350 degrees

-Spray baking sheet generously with non-stick spray

-Prepare meat by trimming, cutting into steak size portions and pounding flat with a meat mallet

-Beat eggs

-Mix panko and cheese

-Dredge steaks in egg, then cheese and panko mixture, covering all sides

-Place on baking sheet

-Bake at 350 for 30 minutes

-Top with enough marinara sauce to cover steaks

-Then top with mozzarella

-Return to oven and bake until cheese is melted, approximately 5-10 minutes

-Enjoy!

Pairs well with pasta, spaghetti squash and homemade bread
