This soup will out do any homemade chicken noodle soup you have ever had! I make a pot of this and the family will snack on it for a solid week. The ultimate way to use the rest of that wild turkey.

Ingredients
Leftover turkey & turkey carcass
1 large onion chopped
4 stalks celery, sliced
4 large carrots, sliced
3 garlic cloves, chopped
1 Tbsp oregano
1 Tbsp thyme
1 Tbsp salt
2 tsp ground pepper
1 package wide egg noodles
Directions
-Place turkey carcass in a stew pot and cover with water. Bring to a simmer, cover and simmer for 2 hours
-Pour contents through a fine metal strainer into a stew pot
-Put broth aside
-Retrieve meat that has fallen from the bone from the strainer
-Add to broth
-Add remaining ingredients and bring to a boil
-Add egg noodles and reduce to a simmer
-Simmer 15-20 minutes or until noodles are tender
-Sprinkle with pepper and parsley if desired for garnish
-Serve with fresh bread
