This low carb, healthy recipe is a perfect appetizer for parties or a yummy side dish with your favorite steak. One of my favorites to make at camp or serve to guests. Skip the breadcrumbs and enjoy!

Ingredients
1 pkg white or cremini mushrooms
1 small onion diced (use purple onion for some extra color
1 cup shredded italian style cheese
1 Tbsp dried italian seasoning
2 tsp alpine touch or favorite seasoning salt
Green onion, diced for garnish (optional)
Instructions
-Preheat oven to 400
-Remove stems from mushrooms, finely dice
-Spray bottom of a glass baking dish with non-stick spray
-Place mushroom tops in dish
-In a small bowl combine diced stems, onion, cheese and seasonings
-Generously stuff each mushroom top
-Sprinkle remaining ingredients over all the mushrooms
-Sprinkle with a pinch of seasoning salt and italian seasoning
-Bake at 400 for 20 minutes or until golden brown
-Top with diced green onion for garnish
-Serve warm or cold
-Enjoy!
Pairs well with meatballs and baked goat cheese for the perfect party platter!
