This savory, hearty recipe is by far my favorite way to prepare a wild game roast. Slow cooked to perfection it melts in your mouth. So flavorful you may never go back to the same old boring roast recipes!
Prep time: 15 minutes
Cook time: 4-6 hours
Servings: 4-8 depending on roast size
Ingredients
One 3-5 lb wild game roast, frozen 1 tbsp Alpine Touch 1 tsp cumin 1/2 tsp allspice 1/2 tsp ginger 1/2 tsp black pepper 1/4 tsp cayenne pepper 2 tbsp olive oil
2 cinnamon sticks
1 onion, cubed
2 cans beef broth
1/2 cup red wine
1 jar of your favorite curry sauce Garnish: 3 tablespoons pomegranate seeds 1/4 cup chives
Cotija cheese, crumbled
Directions
-Remove roast from packaging and pat dry, set aside
-In slow cooker add beef broth, wine, cinnamon sticks and onion
-Place temperature on low
-Combine dry seasonings and rub roast, coating all sides
-Heat 2 tbsp olive oil in large skillet on medium high heat
-Using tongs sear all edges of the roast
-Place roast in the slow cooker and sprinkle remaining spices over top
-Cook for 4-6 hours or until medium rare
-Slice against the grain into thin slices
-Add garnish if desired
-Warm curry sauce for dipping
Note: We like this served with Mexican street corn, black beans and a lime and cilantro quinoa.
