Spaghetti Squash Vegetable Medley

This hearty side just might change your pasta eating habits! Such an easy, tasty way to use up those garden veggies.


Servings: 6

Prep time: 15 minutes

Cook time: 60 minutes


Ingredients:

- 1 spaghetti squash

- 4 Tbsp garlic infused olive oil

- 4 Tbsp dry Italian seasoning blend

- 2 Tbsp garlic sea salt

-1 package sliced mushrooms

- 1 zucchini, cubed

- 1 red pepper, cubed

- 1 onion, cubed

- 1 14 oz jar diced tomatoes


Instructions:

-Preheat the oven to 400 degrees

-Puncture the squash all over

-Microwave for 5 minutes to soften

-Cut the squash in half lengthwise

-Remove the seeds

-Drizzle meaty sides with olive oil and season with Italian seasoning and sea salt

-Place meaty side down, on a sheet pan

-Cook in preheated oven for 20 minutes

-Remove squash from oven, flip meaty side up, place all the other veggies around it on the pan

-Drizzle everything with additional olive oil, Italian seasoning and sea salt

-Roast everything together for another 30 minutes

-Add diced tomatoes in the last 5 minutes

-Scrape the squash into a serving dish and spoon the roasted veggies on top

-Enjoy!


Note: Add grilled meat of your choice to make this dish even more hearty
