The wonderful thing about potatoes is they pair well with pretty much everything, especially this recipe! One of my favorite sides with a big breakfast and then later left over with dinner. Quick and easy, this will become one of your favorites.

Cook time: 30 minutes
Ingredients
6 medium russet potatoes, cubed into bite size pieces
1/2 yellow onion, thinly sliced
2 cloves garlic, diced
3 Tbsp olive oil
2 Tbsp dried parsley (or fresh)
2 Tbsp shredded Parmesan cheese
Salt and pepper to taste
Instructions
-Preheat oven to 375 degrees
-Combine potatoes, onion and garlic in a bowl, toss with olive oil until evenly coated
-Add salt and pepper to taste
-Place potato mixture on a baking sheet (I use parchment paper for easy cleanup)
-Sprinkle with Parmesan cheese and parsley
-Bake at 375 for 30 minutes or until potatoes are fork tender
-Place in a serving bowl, stir
-Enjoy!
Note: Top with your favorite hot sauce to spice it up a bit
