This is another favorite for hosting brunch, Christmas or Sunday mornings. Not everyone likes a sweet breakfast, this is perfect for your savory fans. This fail safe recipe allows you to substitute veggies to your liking. It turns out perfect every time. Being crust-less, it will even delight your low-carb/keto guests!

Ingredients
1 Tbsp olive oil
1 large onion, diced
3 strips bacon, diced (optional & you could easily use breakfast sausage)
1 bunch asparagus, sliced into bite size pieces -OR- veggie of choice (spinach, mushrooms etc.)
1 small potato, diced (also optional)
6 eggs, beaten
3 cups shredded cheese of choice
1/2 tsp salt
1/2 tsp pepper
Instructions
-Preheat oven to 350 degrees
-In a large saucepan, heat olive oil on medium
-Add onion, saute until tender
-Add bacon, potato and veggie of choice, continue to saute for approximately 5 minutes or until veggies become slightly tender (don't over cook!)
-Remove from heat and set aside
-In a large mixing bowl, beat eggs
-Add cheese, salt and pepper, mix well
-Add veggie mixture to bowl, mix until all ingredients are combined evenly
-Spray 9 inch pie plate with non-stick spray
-Add mixture to pie plate
-Bake at 350 for 30 minutes or until golden brown
-Allow to cool 10 minutes before serving
-This dish is great hot or cold, enjoy!
