This is one of my favorite campfire foods. Easy to prep ahead of time and finish on the fire. Your guests can build them any way they want, I like them loaded! Great for large groups.
Prep time: 1 hour
Cook time: 4 hours for venison roast, 30 minutes for remaining ingredients, 5 minutes per serving for grill time
Servings: As many as you want
Ingredients
1 venison roast
1 Tbsp cumin
1 Tbsp smoked paprika
1 Tbsp cayenne pepper
1 Tbsp garlic salt
1 Tbsp dry oregano
5 Tbsp olive oil
1 cup red wine
1 box beef stock
1 onion, cubed
3 bell peppers, sliced
1 yellow onion, sliced
1 head lettuce, shredded
1 package flour tortillas (enough for two per quesadilla)
1 large bag shredded cheese, Mexican blend preferred
1 jar salsa
1 container sour cream
Guacamole (if desired)
1 can nonstick spray
Instructions
Prepare venison roast:
-In slow cooker, add wine, stock and onion
-Place on low heat (middle setting on slow cooker between warm and high)
-Remove roast from package
-Combine cumin, paprika, pepper, garlic salt and oregano for dry rub, coat generously
-Heat 3 Tbsp olive oil in large skillet on high heat, sear roast on all sides
-Place roast in slow cooker, cover and cook for 5 hours
-When roast is done, remove from slow cooker and shred
-Add enough juice to ensure the meat is moist
-Set aside to cool, when cool place in a container to transport
Prepare peppers and onion:
-In a large skillet, heat remaining olive oil
-Place sliced peppers and onions in pan and saute until tender (about 15 minutes)
-Set aside to cool, when cool place in a container to transport
Prepare remaining ingredients:
-Shred lettuce and place in a container for transport
-Gather remaining ingredients for transport (salsa, sour cream and guacamole)
Make your quesadillas on the campfire:
-Get a nice hot campfire going
-Place your grill pan on the rack to heat
-Prepare quesadillas on the side before placing in the grill pan any way you like
-I layer mine like this: Tortilla, cheese, meat, pepper and onion mixture, lettuce, salsa, more cheese, tortilla (be careful not to put to much salsa to avoid sogginess)
-Spray grill pan with nonstick spray
-Place quesadilla in pan, flip when cheese is melted and grill marks are visible (approximately 5 minutes), cook an additional 5 minutes
-Serve hot with desired sides
