Love your store bought salmon burgers? Make your own! I grew up on kokanee (aka landlocked dwarf salmon in Western North America-Idaho to be specific). Tired of the store bought taste, I decided to make my own. You can do this! Soooooo worth it! Yum!

Cook time: 15 minutes
Ingredients
1 1/4 lbs kokanee, skin and bones removed
2 Tbsp horseradish mustard
1 Tbsp mayonnaise
1 Tbsp lemon or lime juice
Pinch of crushed pepper
2 green onions, chopped
1 cup instant potato flakes (I like Idahoan garlic and herb for extra flavor)
2 Tbsp olive oil
Salt and pepper to taste
Buns of choice
Tartar sauce, red onion and fresh greens of choice for topping
Instructions
-Finley dice salmon
-In a large mixing bowl, mix salmon and remaining ingredients
-Massage with your hand until thoroughly mixed
-Form into four equal sized patties
-Heat grill or fry pan to medium high heat
-Cook on each side about five minutes
-Remove from heat when thoroughly cooked
-Serve on toasted buns with desired toppings
-Enjoy!
