There are so many ways to prepare fresh trout! Classic dill, lemon, salt and pepper trout will remain my favorite. A childhood favorite with wonderful memories of my birthday weekend and re-created on my 45th this year! I love to serve it with a fresh tomato, onion and corn salsa.

Cook time: 20 minutes
Ingredients
Fish:
1 fresh trout
1/4 cup flour
3 Tbsp oil
1/2 lemon, sliced
3 sprigs fresh dill
1 lemon
Salsa:
1/2 cup frozen sweet corn, thawed
1 tomato, diced
1/4 red onion, diced
1/2 tsp salt
1/2 tsp pepper
1/4 lemon wedge juice
Instructions
-Sprinkle trout, inside and out, with salt and pepper
-Prepare flour, also sprinkle with salt and pepper
-Dredge trout in flour mixture
-Stuff trout with 1/2 lemon, sliced and fresh dill sprigs
-Prepare grill or fry pan to medium-high heat, oil generously
-Add trout to pan
-Cook 10 minutes on one side, flip, cook another 10 minutes
-Remove bones and serve hot
-Pairs well with salsa and rice or quinoa
