Mmmm the memories! Do you need a little something special to serve up for brunch? Christmas morning maybe? Any day of the week when you are feeling fancy? This simple recipe that has been in the family for generations will not disappoint! The memories of my Grandpa and my Father making these fills my heart with joy. I make them for my children and now they are making them for theirs. Don't be intimidated, it's easier than you think. Note that they can be served with sweet or savory fillings. Fruit and whip cream or avocado and bacon, make them you're own and please enjoy!
Prep time: 5 minutes
Cook time: 20 minutes (2 minutes per crepe)
Servings: 4-6 (depends on how hungry they are)
Ingredients
1 cup flour
3/4 cup milk
4 eggs
1 tsp vanilla extract
pinch of salt
pinch of sugar
Non-stick cooking spray
Fillers of choice (fruit, whipped cream, syrup, peanut butter, avocado, bacon... etc.)
Instructions
Mix all ingredients in a bowl, whip until the lumps are ALMOST gone (you want some lumps)
Heat a small sauce pan to medium high
When warm, spray with cooking spray
Remove from heat
Using a 1/4 cup measuring cup pour batter into pan while rotating until evenly coated with better
Return to heat
As soon as edges start to turn up, flip with a spatula
Wait approximately 30-45 seconds until little brown spots appear on the bottom (peak to check)
Remove crepe and repeat
Enjoy!
