Every time I walked in the house and the smell of this soup was in the air, I instantly felt home. The memories shared around the table and a bowl of this soup over generations are priceless. Ingredients
1 lb ground meat (I prefer venison)
1 cup chopped onions
1 cup cubed raw potato
3/4 cup sliced celery
1 cup chopped cabbage
1 cup sliced raw carrot
1/4 cup chopped green pepper
1/4 cup uncooked rice
1 14 oz can stewed diced tomatoes
1/2 tsp thyme
2 bay leaves
3 tsp salt
1/4 tsp oregano
1/4 tsp basil
1/2 tsp pepper
1 1/2 quarts water
Parmesan cheese
Instructions
Saute onion and ground meat until browned
Prepare vegetables
In a large stew pot on high heat add all ingredients except rice
Once boiling, add rice and reduce to simmer
Cover and let simmer for one hour
Top with Parmesan cheese
