Holiday meals just aren't the same without these. My Grandmother was an amazing baker. I always looked forward to her fresh rolls at every gathering. I was intimidated to try making these on my own until a few years ago. It's a process, but easier than you think and so rewarding! There is nothing more comforting than the smell of fresh baked bread in the oven.
Prep time: 2+ hours
Cook time: 15 minutes
Servings: 20 rolls
Ingredients
2 cups warm water
1/3 cup sugar
2 pkgs dry yeast (2 1/4 tsp = 1 pkg)
1 Tbsp salt
5-6 cups flour
2 eggs
1/3 cup shortening
1 stick unsalted butter
Instructions
-Combine water, sugar and yeast, mix
-Add salt and 2 cups flour, beat well with mixer
-Add 2 eggs, beat well
-Add shortening, beat well
-Add approximately 3 1/2 cups flour, mix by hand until dough is slightly sticky
-Cover and let rest 20 minutes
-Punch down dough and roll it out to 1/2 inch thick
-Cut with 2 1/2 inch cookie cutter
-Dot each cut out with a small amount of butter and fold in half, pinching edges together
-Place in greased pan, seam side down evenly spaced
-Cover and let rise until double in size (30-60 minutes)
-Bake at 375 for 15-18 minutes or until golden brown
-Brush with butter, serve warm
-Enjoy!
