With the abundance of zucchini popping up in the garden this year I wanted to think outside the box and try a savory zucchini bread instead of a sweet one. It has been a hit! You can substitute yellow squash and it turns out just as delicious. A wonderful side for almost any meal, we even used it to make sandwiches, the consistency is perfect!

Ingredients
1 1/2 cups zucchini, grated and excess moister squeezed out
2 cups all purpose white flour
2 tsp baking powder
1/2 tsp baking soda
1 tsp garlic salt
2 Tbsp dried Italian seasoning blend
1 cup milk
1 Tbsp white vinegar
1 egg
3 Tbsp butter, melted
1 1/2 cups grated sharp cheddar cheese (or cheese blend)
4 green onions, chopped
Directions
-Preheat oven to 350 degrees and spray a standard loaf pan with non stick spray
-In a mixing bowl, combine flour, baking powder, baking soda, garlic salt and Italian seasoning
-In a small bowl, combine milk and vinegar
-Mix in melted butter and egg
-Add milk mixture to dry mixture
-Add grated zucchini, cheese and onions
-Mix gently until combined lightly (add flour if dough is to sticky)
-Pour mixture into prepared pan and bake at 350 degrees for one hour or until toothpick inserted comes out clean
