As you all know I LOVE playing with flavors and a variety of recipes from multiple cultures. I recently had a Korean dish called Bulgogi (a Korean style grilled meat dish). From the first bite I knew I had to try it with wild game and the results are.... DELICIOUS! What is so great about this recipe is it works with any wild game. I have used elk, venison and antelope and it was equally delicious every time. Have a little fun in the kitchen and try something new!

Servings: 8
Prep time: 4 hours (for marinade)
Cook time: 10 minutes
Ingredients
4-5 lbs tenderloin or other steak cut (thinly sliced)
1 cup brown sugar
1 cup soy sauce
5 Tbs white wine
3 Tbs sesame oil
2 garlic cloves (chopped)
1 tsp black pepper
2 green onions (chopped - reserve 1/4 cup for garnish)
Instructions
-Thinly slice steak
-In a large bowl mix all other ingredients (reserving 1/4 cup green onions)
-Add steak to marinade mixture (I like to place the meat and marinade into a large zip lock bag to lock in flavor)
-Marinate in the refrigerator for 4-5 hours
-Prepare a hot grill or cast-iron pan (medium-high heat)
-Grill the meat on both sides until medium-well (or desired rareness), about 3 minutes per side
-Serve on top of steamed rice
-Garnish with green onions and sesame seeds
