This vitamin, fiber, protein rich ancient grain is something I highly recommend you incorporate into your repertoire. Such a lovely substitution for rice or potatoes. It pairs so well with wild game! Especially when you add some spices, onions, mushrooms and cheese. Enjoy this fresh take on the ordinary weeknight side dish.

Cook time: 45 minutes
Servings: 6-8
Ingredients
1 cup pearl barley
2 1/2 cups water
2 chicken bullion cubes
4 oz sliced mushrooms
3 scallions, sliced
1 tsp seasoning salt (I prefer alpine touch)
1/2 tsp ground pepper
1 clove garlic
1/4 cup shredded Italian blend cheese (or cheese of your choice)
Fresh parsley for garnish (optional)
Instructions
-Place barley and water into medium sauce pan
-Drop in two bullion cubes
-Layer scallions, garlic and onions on top
-Sprinkle with seasoning salt and pepper
-Bring mixture to a boil, as soon as it boils, reduce to a simmer
-Cover and let cook 45 minutes
-Remove lid and stir in cheese, mix well
-Serve warm
