This quick, easy, healthy recipe is perfect for a weeknight meal. Packed with flavor, you would never guess it's gluten and dairy free. So light and refreshing! Excellent leftover as well.

Ingredients
1 lb ground meat
1 Tbsp peanut oil
1 bunch green onions, sliced (reserve some for garnish)
1 red bell pepper, diced
1 carrot, shredded
1 can water chestnuts, diced
1 head butter leaf lettuce
Peanuts for garnish
Sriracha sauce (optional)
Sauce
3 Tbsp soy sauce
3 Tbsp sesame oil
1 Tbsp white vinegar
1 Tbsp peanut butter
1 Tbsp honey
2 tsp sweet chili sauce
1/2 tsp garlic powder
1 tsp ginger
Instructions
-Heat peanut oil in large skillet over medium heat
-Add diced onion, saute for approximately 5 minutes or until it starts to become translucent
-Add ground meat, saute until nearly done
-Add red bell pepper and carrots, saute for approximately 3 more minutes
-Add water chestnuts
-Reduce heat to low
-Combine all ingredients for sauce in a separate bowl
-Add sauce to meat mixture, thoroughly combine
-Allow to simmer approximately 5 minutes
-Separate butter lettuce into individual lettuce cups
-Scoop mixture it to lettuce cups
-Top with peanuts and green onion
-Add sriracha sauce for a touch of heat
