Ingredients
4 English cucumbers (thinly sliced)
4 Tbs rice vinegar
2 Tbs sesame oil
1 tsp sugar
1/2 tsp flakey sea salt
1/2 cup chopped cilantro
3 green onions (thinly sliced)
1/2 red pepper (thinly sliced)
1 carrot (thinly sliced
2 Tbs minced ginger
1 Tbs minced garlic
2 Tbs sesame seeds
2 Tbs crushed peanuts (optional)
Instructions
Thinly slice cucumbers
Combine all ingredients except for peanuts and reserve 1 Tbs of chopped cilantro for garnish
Toss cucumbers with dressing mix
Top with remaining cilantro and peanuts
